Mini Vegan Cheesecakes

I loved the dairy-filled cheesecakes, as I grew up, with all the amazing flavours and the ton of choice you had knowing that all of them taste so delicious. Fast forward to 5 years later, I no longer eat dairy, meat, eggs or cheesecake, for that matter, and nor do I agree more that I am still eating such yummy food. For those of us that transition from a meat-loving carnivore to an animal-loving vegan, we all have the certain treats that we end up struggling to let go of (mine were pop tarts and creme eggs), so if you don’t want to let go of that cheesecake or if you just want to impress the people you know with a sweet treat, this recipe is for you!

Over here, at Culinary Vegan, we love recipes that deserve to be at the top of a menu in a restaurant, but we also love those simple recipes made with only a few ingredients that you can serve at home or anywhere you like among people that you care about. So we bring you another delight to get excited over with only 7 ingredients and no actual cooking! All you need to do is let this little guys sit in a freezer for 2 hours (if you can wait that long!) and serve immediately! If you want these to be a little more melty and soft, let them sit out at room temperature for a few minutes.

Now if you’re like me, you will be checking constantly to see if they have hardened so you can dig in, so make an extra batch – one to snack on as you unsuccessfully wait patiently and one that will be able to freeze as you devour the others (you’ll be happy you did!).
