Stuffed Eggplants with Peanuts and Rice

Vegetables are great! They fill you up, they keep you healthy, they give you what your body needs and they can taste yummy too! Yes, that’s right I said they can taste great. Everyone knows that if something isn’t made the ‘right’ way, it won’t taste as good as you’d like it to, which is super important if you want to stay healthy long term. This Stuffed Eggplant with Peanuts and Rice has soft rice, creamy eggplant, chewy fruit and crunchy peanuts for contrast. Your mouth is watering already, isn’t it?

This may require a little more effort than you would usually want on a weekday evening after work, but it’s worth it! Something that will motivate you to be healthy, whilst tasting so good is sure to get you hooked on wholesome food like this. With 6 main ingredients, you will have something delicious and hot to serve for dinner that isn’t a local takeaway.
